A comforting and hearty blend of tender chicken and creamy ingredients, perfect for cozy gatherings or meal prep.

Ingredients

  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced green chilies
  • 1 cup corn (fresh or frozen)
  • 4 oz cream cheese
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Mix the Base Ingredients: In a large pot or slow cooker, combine the chicken broth, green chilies, corn, white beans, shredded chicken, cumin, garlic powder, salt, and pepper. Stir well to combine all the ingredients.
  2. Slow Cook or Simmer: If using a slow cooker, set it to cook on low for 6 hours or high for 3 hours. For stovetop cooking, bring the mixture to a simmer and let it cook for about 20 minutes.
  3. Incorporate Creaminess: About 30 minutes before serving, add the cream cheese to the pot. Stir until the cream cheese has melted and is fully incorporated into the chili.
  4. Serve and Garnish: Once all ingredients are heated through, serve the chili hot and garnish with chopped cilantro for added flavor and freshness.

Notes

Use rotisserie chicken for a quick shortcut. Adjust seasoning to your preference before serving.
