A delightful combination of tender chicken and tropical flavors that transports your taste buds to a sunny paradise, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup pineapple juice
  • 1 cup diced pineapple (fresh or canned)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • ¼ teaspoon black pepper
  • Sliced green onions (for garnish)
  • Red pepper flakes (for spice)
  • Chopped bell peppers (for color and crunch)
  • Fresh cilantro or parsley (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare the chicken: Place the 4 boneless, skinless chicken breasts at the bottom of your crockpot.
  2. Mix the sauce: In a medium bowl, whisk together the pineapple juice, diced pineapple, soy sauce, brown sugar, minced garlic, ground ginger, and black pepper until the sugar is dissolved.
  3. Combine in the crockpot: Pour the pineapple mixture over the chicken, ensuring to coat all pieces well.
  4. Cook the chicken: Cover and cook on low for 6-8 hours or on high for 3-4 hours until tender and cooked through.
  5. Shred and serve: Once cooked, shred the chicken in the crockpot and stir it into the sauce for an even distribution. Serve hot, garnished with sliced green onions and sesame seeds.

Notes

Check your chicken toward the end of the cooking time to avoid overcooking. Fresh pineapple offers a brighter flavor, but canned works in a pinch.
