This intriguing bread combines high protein flour with bamboo charcoal for a light, fluffy, and slightly sweet loaf. Perfect for breakfast, sandwiches, or a unique snack.

Ingredients

  • 60 g high protein bread flour
  • 55 g boiling water
  • 240 g high protein bread flour
  • 3 tsp bamboo charcoal powder
  • 1¼ tsp dried instant yeast
  • 1½ tbsp brown sugar
  • 1⅛ tsp salt
  • 160 g fresh milk
  • 12 g butter

Instructions

  1. Mix the Yudane: In a small bowl, combine 60 g of high protein bread flour with 55 g of boiling water. Stir until you form a rough dough. Cover and let it sit at room temperature for at least 12 hours, preferably overnight.
  2. Prepare the Main Dough: In a large mixing bowl, combine the 240 g of high protein bread flour, 3 tsp of bamboo charcoal powder, 1¼ tsp of dried instant yeast, 1½ tbsp of brown sugar, and 1⅛ tsp of salt. Mix well. Add the Yudane dough to this mixture, along with 160 g of fresh milk and 12 g of softened butter.
  3. Bring the Dough Together: Mix the ingredients until they come together to form a cohesive dough. Knead for about 10 minutes until the dough is smooth and elastic.
  4. First Proof: Place the dough in a lightly greased bowl. Cover with a damp cloth and let it rise in a warm area for 1 to 1.5 hours, or until it doubles in size.
  5. Shape and Second Proof: Transfer the dough to a floured surface, gently flatten it, and shape it into a loaf. Place it in a greased bread pan, cover with a cloth, and let it rise for another 30-45 minutes until puffed.
  6. Bake: Preheat the oven to 180°C (350°F). Bake the bread for 25-30 minutes or until golden brown and sounds hollow when tapped.
  7. Cool: Remove the bread from the oven, let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use fresh ingredients, avoid over-kneading, ensure room temperature for ingredients, and consider brushing the crust with butter for softness.
