A comforting and easy slow cooker meal featuring tender chicken thighs and nutritious vegetables, perfect for busy weeknights.

Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (like carrots, potatoes, bell peppers, etc.)
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Brown the chicken: Heat a skillet over medium heat and add a splash of olive oil. Sear the chicken thighs on both sides until golden brown, about 3-4 minutes per side. Remove from heat.
  2. Layer the vegetables: In your slow cooker, add the mixed vegetables and sliced onion evenly.
  3. Add the chicken: Place the browned chicken thighs on top of the layered vegetables.
  4. Prepare the sauce: In a small bowl, mix together the chicken broth, minced garlic, thyme, rosemary, salt, and pepper. Pour this mixture over the chicken and vegetables in the slow cooker.
  5. Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 4 hours. Cook until the chicken is tender and fully cooked through.
  6. Serve: Once done, serve the dish hot, and enjoy your meal.

Notes

Chicken thighs provide a rich flavor and remain juicy when cooked slowly. Feel free to substitute any vegetables based on seasonality or your preferences. You can add optional extras like peas or corn for sweetness.
