A quick and easy recipe for juicy chicken baked with rich gravy, perfect for busy weeknights.

Ingredients

  • 1.25 kg (3 lb) bone-in, skin-on chicken thighs and/or drumsticks
  • 2 tsp olive oil
  • 1 tsp paprika powder
  • 1 tsp dried thyme
  • 1 tsp onion powder (or garlic powder)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp all-purpose flour
  • 1 1/2 cups beef stock/broth
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 200°C (390°F), or 180°C (355°F) for fan ovens.
  2. Mix together the olive oil, paprika powder, dried thyme, onion (or garlic) powder, salt, and black pepper in a small bowl.
  3. Place the chicken pieces in a 23 x 33 cm (9 x 13 inch) baking pan. Drizzle with the oil mixture, rubbing it all over the chicken.
  4. Lay the seasoned chicken skin side up in the pan.
  5. Whisk the flour with about half a cup of beef stock until lump-free. Gradually whisk in the remaining stock and season with additional black pepper.
  6. Pour the gravy mixture into the baking pan around the chicken.
  7. Bake uncovered for about 50 minutes, or until the chicken is crispy and golden brown.
  8. Transfer the chicken to a plate. Use a whisk to smooth out the gravy in the pan, adjusting thickness if necessary.
  9. Serve the gravy in a jug alongside the chicken.

Notes

Using a meat thermometer, ensure the internal temperature reaches 75°C (165°F) for perfectly cooked chicken.
