A comforting, nutritious vegetarian chili packed with rich flavors from beans, vegetables, and spices.

Ingredients

  • 2 cans mixed Beans (kidney beans, black beans), rinsed and drained
  • 2 Bell Peppers, chopped
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 can (15 oz) Tomato Sauce
  • 1 can (14 oz) Diced Tomatoes
  • 2 cups Vegetable Broth (low-sodium)
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion and bell peppers. Cook for 5-7 minutes until softened.
  2. Add garlic and spices: Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Incorporate the tomatoes: Pour in the tomato sauce and diced tomatoes. Stir well to combine.
  4. Add beans and broth: Add the rinsed beans and vegetable broth to the pot. Mix all ingredients thoroughly.
  5. Simmer the chili: Bring the mixture to a boil. Reduce heat and let it simmer uncovered for 20-25 minutes, stirring occasionally, until slightly thickened.
  6. Taste and adjust: Before serving, taste the chili and adjust seasoning if needed.

Notes

Use fresh spices for the best flavor and don’t rush the simmering process to develop richness in taste.
