A refreshing and flavorful dish that brings vibrant Mediterranean flavors to your dinner table with minimal effort.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for serving)

Instructions

  1. Prepare the Marinade: In a bowl, combine the lemon juice, lemon zest, minced garlic, oregano, thyme, red pepper flakes, olive oil, salt, and black pepper. Whisk until well blended.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).
  4. Cook the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Grill for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a lined baking sheet and bake for 25-30 minutes.
  5. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with chopped parsley and serve immediately.

Notes

Don’t overmarinate the chicken or it may become mushy. A meat thermometer is recommended for perfect cooking.
