A delightful dish combining garlic and Parmesan cheese with juicy chicken thighs, perfect for weeknight dinners.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • Kosher salt and freshly ground black pepper, to taste
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 6 large cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  3. Heat an oven-safe skillet over medium-high heat, adding olive oil and 2 tablespoons of butter.
  4. Sear the chicken thighs skin-side down for 6-8 minutes until golden brown.
  5. Combine Parmesan, Italian seasoning, paprika, and red pepper flakes in a bowl.
  6. Flip the chicken and sear the other side for 2-3 minutes.
  7. Add garlic to the skillet and sauté for about 60 seconds.
  8. Return chicken to the skillet, spoon garlic-butter sauce over it, and sprinkle Parmesan mixture on top.
  9. Bake for 15-18 minutes until chicken reaches an internal temperature of 165°F (74°C).
  10. Let it rest in the pan for 5 minutes, then garnish with fresh parsley before serving.

Notes

Allowing the chicken to rest helps retain juices for a moister dish.
