A comforting and easy crockpot meal featuring tender chicken infused with garlic and herbs, paired with roasted vegetables.

Ingredients

  • 2 lbs chicken breasts (boneless and skinless)
  • 1 lb baby carrots (fresh)
  • 1 lb Yukon Gold potatoes (cut into wedges)
  • 1/2 cup butter (salted, melted)
  • 3 tbsp garlic (minced)
  • 1 tsp thyme (dried)
  • 1 tsp parsley (dried)
  • 1 tsp salt (kosher or table)
  • 1/4 tsp black pepper (freshly ground)
  • 1/2 cup chicken broth (optional, for extra flavor)

Instructions

  1. Layer the chicken: Place the chicken breasts at the bottom of your crockpot.
  2. Add the vegetables: Toss in baby carrots and Yukon Gold potato wedges on top of the chicken.
  3. Mix the garlic herb sauce: In a bowl, combine melted butter, minced garlic, dried thyme, dried parsley, salt, and black pepper. Stir until a fragrant blend.
  4. Pour the mixture evenly over the chicken and veggies.
  5. Optional broth: If desired, pour chicken broth around the edges for extra moisture and flavor.
  6. Cook: Secure the lid on your crockpot and cook on low for 6-8 hours or on high for 3-4 hours, checking for an internal temperature of 165°F.

Notes

You can substitute thighs for a richer flavor. Use unsalted butter for better control of salt levels. Feel free to add other vegetables like bell peppers or green beans.
