A comforting bowl of easy chicken ramen made with tender chicken, rich broth, and flavorful noodles, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts (about 1 pound total), boneless
  • 4 cups chicken broth, low-sodium
  • 2 packs of ramen noodles
  • 2 green onions, sliced
  • 2 eggs
  • Soy sauce to taste
  • Salt and pepper to taste
  • 1 tablespoon sesame oil (optional)
  • 1 tablespoon vegetable oil for cooking

Instructions

  1. Cook the chicken: In a pot, heat vegetable oil over medium heat. Add chicken breasts and cook until browned on both sides and cooked through, about 5-7 minutes. Remove and let rest.
  2. Simmer the broth: In the same pot, add chicken broth and bring to a gentle simmer.
  3. Soft boil the eggs: In a separate pot, bring water to a boil, add eggs and cook for 6-7 minutes. Transfer to an ice water bath, cool, peel and set aside.
  4. Cook the noodles: Add ramen noodles to simmering broth and cook according to package instructions, about 3-4 minutes.
  5. Slice the chicken: While noodles are cooking, slice the rested chicken into strips.
  6. Season the broth: Return sliced chicken to the pot and season with soy sauce, salt, and pepper to taste.
  7. Serve: Spoon ramen into bowls, top with sliced green onions and halved soft-boiled eggs. Drizzle with sesame oil if desired.
