Creamy and comforting, Easy Chicken Alfredo is a classic dish made with tender chicken, rich Alfredo sauce, and perfectly cooked fettuccine. Ideal for families or a cozy night in.

Ingredients

  • 4-6 thinly sliced chicken breasts
  • ½ cup all-purpose flour
  • 2 eggs, whisked
  • 2 cups panko bread crumbs
  • ¼ cup parmesan cheese
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons Italian seasoning
  • Salt and pepper to taste
  • Oil, for frying
  • 1 lb fettuccine, cooked al dente
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 3 garlic cloves, finely minced
  • ½ cup parmesan cheese (plus more for serving)
  • ¼ cup pasta water
  • Salt and pepper to taste

Instructions

  1. Boil the Pasta: Bring a large pot of water to a boil and add a generous sprinkling of salt. Cook the fettuccine according to package instructions until al dente, then drain, reserving ¼ cup of pasta water.
  2. Prepare Breading Station: In a large dish, combine the panko bread crumbs and ¼ cup parmesan cheese. In a separate dish, whisk the eggs. Set these aside for coating the chicken.
  3. Bread the Chicken: Coat each chicken breast in all-purpose flour, shaking off any excess. Dip it into the whisked eggs, followed by the breadcrumb mixture, ensuring an even coating on all sides.
  4. Cook the Chicken: In a large skillet, heat oil over medium-high heat. Once hot, add the breaded chicken and cook for 2-3 minutes on each side until golden brown and cooked through. Remove from the skillet and slice into bite-sized pieces.
  5. Make the Alfredo Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 10 seconds until fragrant. Pour in the heavy cream and add ½ cup parmesan cheese. Whisk together, cooking for 6-8 minutes until the sauce thickens. Season generously with salt and pepper.
  6. Combine Everything: Toss the cooked fettuccine with the Alfredo sauce, adding some reserved pasta water for a creamier consistency. Taste and adjust seasoning if necessary.
  7. Serve: Plate the creamy fettuccine and top with sliced chicken pieces. Garnish with additional parmesan cheese if desired, and enjoy!

Notes

Don’t overcook the chicken and use fresh garlic for the best flavor. Adjust consistency with reserved pasta water as needed.
