Effortlessly prepare a tender and flavorful whole chicken in your crockpot with minimal active time.

Ingredients

  • 1 whole chicken (3-4 pounds)
  • 2 teaspoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 lemon, halved
  • Vegetables of choice (optional)

Instructions

  1. Rub the olive oil all over the chicken, ensuring it’s evenly coated.
  2. In a small bowl, combine the garlic powder, paprika, onion powder, salt, black pepper, and thyme. Mix well.
  3. Rub the spice mixture all over the chicken, getting it into the crevices for maximum flavor.
  4. Squeeze the lemon halves inside the chicken cavity, then place both halves inside the cavity as well.
  5. Place the whole chicken in the crockpot. If you’re using vegetables, add them around the chicken.
  6. Cover and cook on low for 360-480 minutes (6-8 hours), or until the chicken is cooked through and tender.
  7. Carefully remove the chicken from the crockpot, letting it rest for a few minutes before carving. Enjoy your hearty meal!

Notes

Use a meat thermometer to ensure the chicken has reached the safe temperature of 165°F. Avoid opening the crockpot frequently while it cooks.
