A delightfully spooky dish perfect for Halloween gatherings, these fun, bite-sized meatloaf creations are sure to add laughter and flavor to your table.

Ingredients

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Sausages (for tails)
  • Black olives (for eyes)
  • Pepperoni slices (for ears)
  • Vegetables (for serving)
  • Ketchup (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure it’s ready for baking when you’re done preparing the meatloaf mice.
  2. Mix in a large bowl, combine the ground beef (or turkey), breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated, taking care not to overmix for a tender texture.
  3. Shape a handful of the mixture into small mouse forms. Aim for an oval shape that tapers at one end to mimic a mouse’s body.
  4. Prepare the formed mice on a baking sheet lined with parchment paper to prevent sticking and make cleanup easier.
  5. Add a small piece of sausage at the tapered end for the tail, two black olives for the eyes, and a slice of pepperoni on one side for the ear.
  6. Bake in the preheated oven for 25-30 minutes, or until the mice are cooked through and reach an internal temperature of 160°F (70°C).
  7. Serve your meatloaf mice on a wooden board, surrounded by fresh vegetables. Use ketchup as “blood” for serving.

Notes

Ground turkey is a leaner option for a healthier choice. Feel free to experiment with spices; adding smoked paprika can enhance flavor!
