A delightful and easy-to-make dish combining savory chicken, vibrant vegetables, and rice, making it perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1/2 cup peas
  • 1/2 cup carrots, diced
  • 2 cloves garlic, minced
  • 2 shallots, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat until shimmering.
  2. Add the minced garlic and chopped shallots, stirring and sautéing until fragrant, about 1 minute.
  3. Push the garlic and shallots to the side of the pan, pour in the beaten eggs, and scramble gently until fully cooked, about 2 minutes.
  4. Stir in the diced chicken, peas, and carrots, stir-frying until heated through.
  5. Add the cooked rice and soy sauce, mixing everything well until the rice is heated and coated evenly.
  6. Taste the dish, adding salt and pepper as needed, and cook for an additional 2-3 minutes before serving hot.

Notes

Using cold, day-old rice works best for this recipe to prevent a mushy texture.
