A delightful dish combining cheesy tortellini with tender chicken, vibrant spinach, and a creamy sauce, perfect for busy weeknights.

Ingredients

  • 2 cups cheese tortellini
  • 1 tbsp salted butter (plus extra for greasing)
  • 1 tbsp all-purpose flour
  • 1 cup milk (preferably 1% or 2%)
  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup shredded low-moisture mozzarella cheese (divided into two 1/4 cup portions)
  • 1/2 lb. cooked chicken, shredded or diced
  • 2 cups fresh spinach, loosely packed
  • 1/4 tsp Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C) so it’s hot and ready when you need it.
  2. Bring a pot of salted water to a boil. Add the tortellini and cook according to the package instructions, usually about 5 to 10 minutes. Drain and set aside.
  3. In a large skillet, melt the tablespoon of butter over medium-low heat. Once melted, add the flour and whisk together until combined.
  4. Slowly pour in the milk while whisking continuously. Continue to whisk until the mixture thickens slightly. Add the Parmesan cheese and stir until melted and combined.
  5. Stir in the cooked chicken, spinach, tortellini, and 1/4 cup of mozzarella cheese until everything is well mixed.
  6. Grease an 8×8-inch casserole dish with butter. Spoon the tortellini mixture into the dish and spread it evenly.
  7. Sprinkle the remaining 1/4 cup of mozzarella cheese on top, along with the Italian seasoning. Bake in the preheated oven for about 15 minutes.
  8. Switch the oven to broil and cook for an additional 2 to 3 minutes, or until the top is golden and bubbly. Watch closely to prevent burning.

Notes

Don’t overcook the tortellini and use fresh ingredients for the best flavor. Adjust cheese for creaminess and try adding other spices for variety.
