Chicken Stew is the ultimate comfort food, packed with tender chicken, hearty vegetables, and savory flavors, perfect for any day of the week.

Ingredients

  • 2 lbs chicken thighs or breasts, cut into bite-sized pieces
  • 4 medium carrots, sliced
  • 1 onion, diced
  • 2 potatoes, diced
  • 3 cloves garlic, minced
  • 4 slices bacon, chopped
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons flour (optional)

Instructions

  1. Cook the bacon: In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Brown the chicken: Add the chicken pieces to the pot and brown them on all sides. Remove and set aside once browned.
  3. Sauté the vegetables: In the same pot, add the onions, garlic, and carrots. Sauté for about 5 minutes until the onions become translucent.
  4. Thicken (optional): If using, sprinkle the flour over the sautéed vegetables and stir to combine.
  5. Add the broth: Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  6. Combine ingredients: Return the browned chicken and crispy bacon to the pot. Add the diced potatoes, thyme, rosemary, salt, and pepper.
  7. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the chicken is tender and fully cooked.
  8. Adjust and serve: Taste and adjust the seasoning as needed. Serve hot.

Notes

For a lighter dish, you can use chicken breasts instead of thighs. Skip the flour if you’re okay with a brothier stew, or use cornstarch for a gluten-free option.
