A comforting and hearty Chicken Potato Soup filled with tender chicken, hearty potatoes, and crispy bacon in a creamy broth.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 large potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme

Instructions

  1. Cook the bacon: In a large pot, cook the bacon over medium heat until crispy. Remove it from the pot and set aside, leaving the bacon grease for flavor.
  2. Sauté the vegetables: In the same pot, add the diced onion, carrots, and celery. Cook them until softened, about 5 minutes. Stir occasionally to prevent sticking.
  3. Add the diced potatoes, shredded chicken, and chicken broth to the pot. Increase the heat and bring to a boil, then reduce it to a simmer. Cook until the potatoes are tender, about 15 minutes.
  4. Incorporate the heavy cream, garlic powder, thyme, and reserved crispy bacon. Season with salt and pepper to taste, adjusting as necessary.
  5. Finish and serve: Let it simmer for an additional 5 minutes before serving hot, allowing the flavors to meld together beautifully.

Notes

Ensure the bacon is crispy for added crunch and flavor. Tweak seasoning to your preference and be careful not to overcook the potatoes.
