A comforting chicken meatball soup with tender meatballs, flavorful broth, pasta, and mixed vegetables, perfect for cozy dinners.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup pasta (your choice)
  • 2 cups mixed vegetables (carrots, celery, and peas)
  • Fresh parsley for garnish

Instructions

  1. Make the meatballs: In a mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined, then form the mixture into small meatballs (about 1 inch in diameter).
  2. Boil the broth: In a large pot over medium-high heat, bring the chicken broth to a boil.
  3. Cook the meatballs: Carefully add the meatballs to the boiling broth. Allow them to cook for about 10 minutes, or until they are cooked through and float to the surface.
  4. Add pasta and vegetables: Add in the pasta and mixed vegetables. Continue to cook until the pasta is tender, which typically takes 8-10 minutes.
  5. Serve and garnish: Bowl your soup hot, garnishing with fresh parsley before serving.

Notes

Use whole wheat or gluten-free breadcrumbs for a healthier option. For added flavor, consider using homemade chicken broth if available.
