A delightful one-pot dish bringing together tender chicken and creamy Marsala sauce with orzo pasta, perfect for busy weeknights.

Ingredients

  • 1 cup orzo pasta
  • 1 lb chicken breast, diced
  • 1 cup Marsala wine
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil (for cooking)
  • Fresh parsley (for garnish)

Instructions

  1. Sauté the chopped onion and minced garlic in a large pot with olive oil over medium heat for 3-4 minutes until softened.
  2. Add the diced chicken and cook for 5-7 minutes until no longer pink, stirring occasionally.
  3. Stir in the orzo and cook for 1-2 minutes to lightly toast it.
  4. Pour in the Marsala wine and scrape up any browned bits for added flavor.
  5. Add the chicken broth and bring to a simmer, cooking for 10-12 minutes or until the orzo is tender.
  6. Reduce heat to low and stir in the heavy cream. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve.

Notes

Cut chicken into uniform pieces for even cooking. Adjust seasoning and add more broth if the dish is too thick.
