Ingredients
3 large chicken breasts
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
1 1/2 Tbsp olive oil
4 oz cream cheese (cold)
1 Tbsp mayonnaise
2 garlic cloves (pressed)
1/4 tsp salt
1 1/2 cups baby spinach leaves
1/4 cup mozzarella cheese
1/4 cup parmesan cheese
Instructions
Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.
Prepare the Filling: In a bowl, mix the cream cheese, mayonnaise, pressed garlic, 1/4 tsp salt, baby spinach, mozzarella, and parmesan until it’s well combined.
Season the Chicken: Rub each chicken breast with salt, black pepper, garlic powder, and paprika, ensuring they are evenly coated.
Create Pockets: Carefully cut a pocket into each chicken breast, being careful not to cut through the other side.
Stuff the Chicken: Fill each chicken pocket with the cream cheese mixture and secure with toothpicks if necessary.
Sear the Chicken: Heat the olive oil in a skillet over medium-high heat. Cook the stuffed chicken breasts for 3-4 minutes on each side until they are golden brown.
Bake the Chicken: Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked through and no longer pink in the center.
Rest Before Serving: Allow the chicken to rest for 5 minutes before serving to let the juices redistribute.
Notes
You can use low-fat cream cheese for a lighter version. Add herbs or sun-dried tomatoes for extra flavor.
