Taco Soup is a hearty and delicious meal that combines ground beef, beans, and taco seasoning for a quick and satisfying dish perfect for busy weeknights.

Ingredients

  • 1 lb Ground Beef
  • 1 can Canned Black Beans, drained
  • 1 can Canned Corn, drained
  • 1 can Canned Diced Tomatoes
  • 1 packet Taco Seasoning
  • 1 cup Beef Broth
  • 1 Bell Pepper, chopped (optional)
  • 1 Onion, chopped (optional)
  • Salt and Pepper to taste

Instructions

  1. Brown the Beef in a large pot or Crock Pot over medium heat until no longer pink, breaking it up as it cooks. Drain excess fat if needed.
  2. Sauté the chopped onion and bell pepper (if using) for about 3-5 minutes until they soften.
  3. Combine the black beans, corn, diced tomatoes, taco seasoning, and beef broth until well mixed.
  4. Cook the Soup:
    • Stovetop: Bring to a boil, then reduce to low and simmer for 20 minutes.
    • Crock Pot: Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  5. Season to taste and enjoy!

Notes

Browning the beef well enhances flavor. Adjust spice levels to your preference, and consider adding more veggies for added nutrition.
