A delightful mix of oats, nuts, and sweeteners, these homemade granola clusters are customizable and perfect for breakfast or snacks.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Mix the rolled oats, mixed nuts, and salt in a large bowl. Stir to evenly distribute the ingredients.
  3. Prepare the wet ingredients by melting the coconut oil in a small saucepan over low heat, then stirring in the maple syrup (or honey) and vanilla extract. Remove from heat once combined.
  4. Combine the warm mixture with the oat and nut mixture. Stir until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer. Bake for about 25 minutes, stirring once halfway through, until golden brown.
  6. Cool completely on the baking sheet. Once cooled, break the granola into clusters and mix in dried fruit if using.
  7. Store the granola clusters in an airtight container. Enjoy!

Notes

Avoid overbaking the granola to prevent burning. Allow it to cool completely for the best cluster formation.
